Description
The vines
- This cuvée is crafted from carefully selected plots where the Syrah, Mourvèdre, and Grenache Noir grapes are at their most concentrated—plots we have learned to recognize over the years.
- The vines are given special attention. Ripening is closely monitored until the first signs of berry shriveling appear, which signal the start of the harvest.
- The grapes undergo an initial sorting in the vineyard and are transported to the winery in crates, where a second manual sorting is performed.
Winemaking and aging
- This cuvée is crafted from three separate harvests—one for each grape variety—due to their differences in ripening times.
- As with the other vintages aged in oak barrels, maceration is carried out using traditional methods and lasts about four weeks. The process is monitored daily through tastings conducted by the cellar master.
- The entire batch is transferred to new barrels as soon as alcoholic fermentation is complete.
- The wine is aged for approximately 18 months exclusively in French oak barrels. The final blend is determined following a tasting in which only the most promising components are selected. After bottling, the wine is aged for at least one year in the bottle before being released to the market.
