The vineyard

Disbudding and leaf removal over a part of the line in order to give the grapes good conditions to ripen

Harvests start when the sugar content reaches 15% Vol

Period: end of august in the morning to bring the wine cellar fresh grapes

 

 Vinification and aging

Aged in oak barrels for more than 10 years in Solera.

Solera: method of ageing which consists in a stacking of barrels on several heights.

The wine at the end of the ageing intended to be conditioned, is tapped and the quantity of wine removed is replaced by the wine from the barrels above
